Meet… Live Swimming Pink Scallops
The Swimming Pink Scallop is a delicious and colorful species of scallop. They are sold live and in shell with a smaller size more similar to a Nantucket Bay Scallop and average about 22 pieces per pound. This season typically runs from January till May. These scallops are hand harvested so they don’t have as much sand or silt in them which is typical of live sea scallops. Evan’s scallops are incredibly versatile because they are so clean and are perfect for eating whole. These will arrive alive and should be eaten within 3 or 4 days of delivery. Our favorite ways to eat them are as a clam substitute in linguine and clams, lightly steamed like a softshell clam or baked like an oysters rockefeller. We recommend purging them before cooking to remove any sand or silt. To purge a scallop, let them soak in cold, salty water for 10-15 minutes.
