Second year in a row ordering these live crabs. It has become a tradition for my mother's birthday! Absolutely love the freshness!

The crab came as promised very fast. Shipping crabs were alive, cook them up and had them. I live in Mesquite Nevada, so we don’t get a lot of crab out this way, but the ones that I received from a fish were absolutely delicious and it was shipped as promised, and will do business again.

The crabs arrived quickly and all alive. Beautifully packed but not with unnecessary stuff. I lived out in the PNW for over ten years, plus I'm a chef with a love of great seafood so, this wasn't my first time cooking these gems of the sea. This is how I do it. Since I had just four there was no reason to fire up a giant pot, so I used my Le Creuset 7 quart, and cooked them one at a time. I boiled water, salted it, weighed the crab (all around or just above 2 pounds) and put them in the boiling water. I waited for it to come back to the boil then used my 7.5 minutes per pound formula, so basically 15 minutes after the waters comes back to the boil. I also put it in the water belly side up. When the crab is done I plunge into a big bowl of ice, then proceed with the rest of the crabs. Once they're all done and chilled I'll clean them. Then back in the fridge they go. I like Dungeness crabs chilled. Just a squeeze of lemon is all they need, but it's also nice to make up a mustard sauce to dip the big chunks of crab into. It's rich and the mustard sauce can help to cut through that. A favorite way to enjoy them is an open faced sandwich on sourdough bread, nice greens, crab, lemon? How could you go wrong?
The rest of the crab will be picked and made into crab cakes and frozen. No waste!
